Start off by applying Draconid oil on your sword for extra damage and also using your Quen (Protective Shield). While the Wyvern is flying in the air, use your crossbow to force it down to the ground. Then yse your quick attack with your sword for about 3-4 hits before dodging Wyvern's attack.
