The Flying Knee attack is done by pressing the Jump button + Down (D-pad) + Attack. If you need to get closer to an enemy to grapple or throw him, the Flying Knee will help a ton. It doesn't knock an enemy down so it can help you cover distance for a close grab or headbutt attack.
