In order to defeat Akira Nishikiyama, keep your distance. He's a brute and wants to do grapple moves on you so make sure he never gets too close. When he closes in, use the Flaming Uppercut attack which he has no way of blocking. If you repeat this, you can beat him without taking a hit.
