Werewolves are difficult to kill because they regenerate their health. Make sure to craft Moon Dust Bombs (formula can be found at the Herbalist's Hut North-East of Oxenfurt). Apply Cursed Oil on your sword for extra damage and use swift attacks. The Yrden (Slow) and Axii (Hypnotize) spells can also help.
