Performing a perfect turn requires you to hit a turn on or very close to beat. Do this more efficiently: For short turns, hold the Action button (X on PS4) before a turn and simply tap the direction of the turn(s) – no need to hold direction. Release the Action button only after you've executed the turn(s). For long turns you need to hold the direction longer.
