Go to the Player Status screen by pressing the Start/Options/+ menu button depending on the platform you play on. From there, press the Details button (Triangle on PS5/X on Switch). From there you can keep track of your Side Missions and how many collectibles you need as well as see what Sushi you have. In general, the Details menu provides you with a quick glance of your repertoire.
