It's possible to parry or block all regular enemy attacks. Focus on their attack patterns, you can time each of their attacks and consecutively "Perfect Guard" to reduce damage taken. Some attacks are unblockable. Enemies with smaller weapons tend to attack multiple times whereas heavier weapons are usually one hit.
