There are few things you can do to escape most enemies. You can jump up to a higher ledge. Ranged enemies will still be able to shoot you if you are too close though. Another thing is some larger ground enemies aren't able to get onto the stairs. So you can use stairs as a defensive area to drink potions or cast spells from. This will not work for flying enemies.
