When you dodge or evade an enemy attack, a glowing orange-red spot shows on their body. Move your pointer/crosshair over the orange area and attack. You'll hear a high pitched ring and the orange spot gets highlighted with a circular effect. Hitting a weakpoint does extra damage and can result in a deathblow.
