When you’ve completed a quest that allows you to select a reward, it’s possible to change which rewards or stats on the rewards you receive. On the Select a Reward screen, don’t choose any of the offered items and instead, quit the game. Load the game and turn in your quest again. Some rewards are set, so instead what this method would do is re-roll stats. Otherwise, the rewards can change.
