There's no need to keep any of your junk items or materials. They're easy to come if you need them later in the game. In your inventory you can sell these items that "might be worth some money" easily by pressing the Sell All button. This only sells all junk materials so you don't have to sell each stack individually. All of your healing and food items will not be sold.
