It might not be obvious and possibly hidden on purpose, but there is a way to view the total amount of Journal Entries available on a map as well as how many you've discovered. Fast Travel from a Banner/Flag to a different location or checkpoint on the map. You will briefly see the Journal Entries you've found in the bottom left corner of the map.
